Chicken Recipes - Recipe for Chicken Mole




Chickens have been used for food for thousands of years, but it wasn't until World War II that it became a staple of the American diet. Look in old cookbooks, and there are a few recipes for chicken, but most of them are for fried chicken or broiling. Three things contributed to the chicken passing beef and veal as America's favorite meat: a beef and pork shortage in World War II, the availability of chicken pieces (as opposed to whole chickens), and the Mad Cow epidemic of the mid-1990s.





Whatever the reasons, chicken is now the most popular meat in America. Which means we eat chicken nearly every day. In fact, the average American eats over 60 pounds of chicken each year! Most of us end up looking for chicken recipes to relieve the boredom of chicken every day. Fortunately, there is no shortage of recipes for chicken. The trick is finding recipes that are quick, easy, healthy... and different.





Here is a recipe for Chicken Mole that fits the bill. Mole (pronounced Moh-lay) is the name for any number of Mexican sauces that usually include nuts, chilis, and chocolate. This recipe is delicious and healthy - and easy, too.





Chicken Mole


Serving Size: 1/6 of recipe


Yield: 6 servings





Ingredients:





1 chicken fryer, cut into pieces, skin and fat removed


1/4 cup water


1/4 cup chili powder


1 teaspoon oregano


1 teaspoon cocoa


1/2 cup + 2 Tablespoons flour


1 teaspoon pepper


1 teaspoon garlic powder


1 cup water

1 Tablespoon creamy peanut butter


5 cups water





Instructions:





1. Place chicken in a large pot with the 1/4 cup of water. Cover and simmer until tender, about 45 minutes.





2. In a medium bowl, mix chili powder, oregano, cocoa, flour (1/2 cup plus 2 Tablespoons), pepper, and garlic powder along with 1 cup of water.





3. Add mixture from step 2 to chicken in pot, mix well.





4. Add peanut butter and 5 cups of water to chicken in pot; mix well.





5. Bring to a boil.





6. Reduce heat to medium. Cook for 10-15 minutes.





7. Stir and serve immediately.





This exciting chicken recipe is a crowd-pleaser, for sure! And with 210 calories per serving - and costing just $1.10 per serving - it's really a guiltless pleasure!
